About
It seats four hundred — a hundred and sixty-eight on the ground floor, a hundred and seventy-six on the first, fifty-six at the bar in the cellar — and Ines Cavalcante, 43, has cooked at the pass of it for eleven years, the last seven of them as head chef. Every night she writes the book by hand: what came in, what went out, what each plate cost in flesh and gas and time. She is the most trusted person in the building and the only one who has never opened her own bank statement. For six years her sous chef, Tam Arnott, 40, has been paying a third of her rent. A standing order for £340 leaves an account at Corvid Mutual that Ines opened in 2011 for a bursary payout and has never logged into since. The payee is her letting agent. The reference is her flat. The collection comes out on the third of the month, seventy-two times, and it lands in the middle of a statement that Ines has scrolled
